Agricola Geisha | Filter Roast | Terroir Laboratory
Description
AGRICOLA GEISHA — LOT 13
PANAMA · BOQUETE · JARAMILLO
Founded by the Palenzuela family, Agricola is located on the slopes of Jaramillo in Boquete, Panama.
The farm takes a meticulous approach to cultivation, growing different coffee varieties in separate plots to highlight their individual characteristics and preserve their distinctive flavour profiles.
Situated at elevations ranging from 1,360 to 1,900 metres above sea level, the farm benefits from cool nighttime temperatures and volcanic soils. These conditions contribute to slower cherry maturation, allowing the coffee to develop greater aromatic complexity.
Cultivating varieties including Geisha, Pacamara and Pacas, Agricola is a relatively young farm that has quickly gained attention within Panama's specialty coffee community. Its growing reputation among roasters and coffee professionals reflects the quality and potential of its distinctive terroir.
Agricola Geisha — Lot 13
Process: Washed Anaerobic Oxidation
Drying: Cold Dark Room Dried
What makes this lot particularly special begins with its anaerobic oxidation process.
By carefully managing fermentation in a low-oxygen environment, the producer aims to develop greater flavour complexity, juicy sweetness and expressive white floral aromatics.
The coffee is then slowly dried in a cool, dark, temperature-controlled environment. This carefully managed drying stage helps preserve the coffee's delicate aromatic qualities while promoting even, controlled moisture reduction.
The result is a distinctive interpretation of washed Geisha, offering layered sweetness, elegant floral characteristics and a refined fermentation profile that sets it apart from more traditionally processed washed coffees.
